This, along with all-natural Colorado-raised beef, lamb, and chicken, helps us not only lower our environmental footprint but also increase our quality of food. Our chefs are always seeking innovative ways to serve up Irish and American favorites in new and enticing ways. Our goal is to make everything in house – from our salad dressings to our desserts to most everything in-between. Featuring a state-of-the-art brewhouse, called a High Efficiency Brewing System (HEBS), our brewery offers several environmental and operational efficiencies, including reducing water waste and increasing our extraction rate so we can get the most out of our grain. We are excited to be able to do our part for the environment, the rivers we love to fish and this wonderful community.
